Chef Drew Brow

Chef Drew was born in Springfield MA. He moved to Northampton in grade school. The first restaurant he visited was Pizzeria Paradiso (now HighBrow) he was sitting in the lower dining room watching the pizza cooks throw the pizza up in the air. The cook noticed and threw the pizza to him. this was the beginning. While attending Smith Vocational High school he began to work in the downtown restaurants. At 17 he was hired y his mentor and now business partner William Collins.. He quickly moved up the Spoleto restaurant group ladder at 19 he was the head chef of Spoleto catering. At 21 he was the chef and general manager of Paradise City Tavern. When he turned 24 he decided he wanted to see what else was out there so he packed his car and took off. For the Remainder of his 20's he cooked up and down the eastern seabord taking a few years to master his craft. upon returning he took the job of executive chef at Center Square Grill. He Held This Position for 4 years and now is the founder Of HighBrow Wood Fired Kitchen + Bar..

Chef Drew is known for his play on cutting edge creative American food with touches of French and Italian influence. he is excited to showcase his talents and utilize the wonderful offerings of the pioneer valley. Over the years he has created relationships and friendships with the local farmers, brewers, Butchers + Seafood mongers.


Bill Collins grew up on Long Island, and from a young age was always involved in the restaurant business. He began working in his family’s hotel and restaurant than moved on to working for various corporate concepts at the management level. 15 Years ago Bill moved to Western Massachusetts to be close to family and began working for the Spoleto restaurant Group. He finished his tenure with the group as the Chief Operating Officer.

In 2008, Bill was awarded the prestigious Business West “40 under 40 award.” He has been a Major supporter of the Shriner’s Hospital for Children in Springfield, Food Bank of Western Massachusetts, Unify Against Bullying and he is also one of the founders of the Northampton Jazz Festival. Bill has trained privately with Chefs at Cetli in Tulum, Mexico and has taken classes on wine blending at Lenz Vineyard on Long Island. In addition, he continues to be as active as possible with local non-profits that benefit the community. Bill has an unlimited passion for wine, food and the restaurant business. From a young age Bill wanted to open his own restaurant, and proudly after his time with the Spoleto Group and being mentored by Restaurateur Claudio Guerra he did in 2014. Center Square Grill opened in East Longmeadow, Ma. On May 5, 2014. He and then business partner opened up to a big hit being named Best Family Run Restaurant, Best Waitstaff, Best Bartenders, Best Outdoor Dining for the last 5 years running by the Reader’s Raves Awards. Mike left to pursue a career in realty in 2016, and now Bill has Partnered with longtime friend and Chef Andrew Brow to open his second operation HighBrow Wood Fired Kitchen and Bar. Bill hopes Andrew and he will be able to Partner with others to expand and bring more quality locations to the region’s restaurant scene.
